I included Hunt’s Diced Tomatoes in my recipe because I love tomatoes in stew and Hunt’s taste delicious. I can find them at all my local grocery stores and do my best to always have a few cans in my pantry. Hunt’s prepares their tomatoes differently than other brands and you can taste the difference. Tomatoes are vine ripened, peeled using steam instead of chemicals and are canned quickly to preserve flavor and freshness. All this helps their canned tomatoes to be sweet, flavorful and ready to be made into dinner!

I created this chicken stew recipe with one thing in mind: getting a delicious dinner on the table fast. Mission accomplished! You can use whatever chicken is easiest for you- store bought frozen grilled chicken, rotisserie chicken or even canned. I opted for canned new potatoes and carrots because they take about a minute to be recipe ready.

How to make easy chicken stew

This recipe for chicken stew comes together so fast it’ll surprise you. I first heat chicken broth and the seasonings to a boil, then reduce the heat and add potato flakes. The potato flakes not only thicken the stew but add additional flavor. Then you just add the remaining ingredients to the pot- the chicken, potatoes, carrots, frozen peas and tomatoes. Heat for 5 minutes and add milk, for a bit of richness. You can use evaporated milk if you prefer, or leave it out if you’d like. I like to serve this chicken stew topped with a bit of grated cheddar cheese. It adds a great flavor and there’s not much better than a warm bowl of it!

  • 3 cups chicken broth
  • 1/4 cup instant potato flakes
  • 1 tsp rubbed sage
  • 1 tsp onion powder
  • 1 tsp season salt
  • 1/2 tsp herb-blend all purpose seasoning
  • 1/8 tsp black pepper
  • 3 cups cooked diced chicken
  • 1 1/2 cups frozen peas
  • 1 14-oz can sliced carrots
  • 2 15-oz can whole new potatoes, drained and cut into halves or quarters
  • 1 14.5 oz can Hunt’s Diced Tomatoes, drained
  • 1/2 cup milk
  • shredded cheddar cheese, for topping (optional)

How to make 20-Minute Chicken Stew recipe

  1. Drain cans of potatoes and carrots, set aside.
  2. Add 3 cups chicken broth and all seasonings to a medium sized pot. Bring to a boil, then reduce heat to medium.
  3. Add potato flakes and whisk to combine. Add in all remaining ingredients- chicken, vegetables, tomatoes- except milk. Cook for 5 minutes, then reduce heat to a simmer. Simmer for 5 minutes. Stir in milk and serve, topped with cheddar cheese if desired.

Yes, you can freeze chicken stew! Just double the recipe and make a big batch, then spoon half into an airtight freezer container. I store chicken stew in the freezer for up to 4-6 months. When you’re ready to eat it, just defrost on the countertop, then transfer the stew to a saucepan and heat over medium until just barely bubbling. Dinner is served!

Chicken stew is one of those one-pot meals that can be served by itself. However, I also think it’s wonderful with a side salad and a loaf of crusty French bread.

What herbs and spices go in chicken stew?

I added several of my favorite herbs and spices to go in this easy chicken stew recipe. Everything I used can be found on the spice aisle at just about any grocery store. They’re all very common. I adore adding rubbed sage to any recipe with poultry. Season salt adds a bit more flavor than just regular salt. Adding onion powder means you don’t have to chop a fresh onion! Black pepper just adds a little zing that goes perfectly with this stew. You’re welcome to taste the finished stew and add any of your favorite spices too.

What vegetables do you put in chicken stew?

This is a very classic stew recipe with modifications to make it come together fast. The vegetables I chose contributed towards that quick dinner factor. I used frozen peas, canned carrots, potatoes and tomatoes. If you’d like to add other vegetables, I think sweet potatoes would be incredible. You can also add corn and/ or baby red potatoes.
