Caviar | Coffee caviar is a fun little kitchen science experiment which you can try with kids. It will be a fun project and you will be getting a delicious desert topping at the end of the day.

What is Coffee Caviar?

Caviar is nothing but transforming liquid into solids by the method of molecular gastronomy. Coffee caviar is made by transforming black coffee into small sphere like shape. It uses simple ingredients like cold oil and agar agar to make this. Usually caviar is made using sodium alginateand calcium chloride. But this one is made using agar agar and cold oil.

Coffee caviar adds a nice touch to this plated desert. It looks pretty as well as add a balance and explosion of coffee flavour. It is nothing but sweetened black coffee is thickened with agar agar mixture. This is then poured into a dropper and made into caviar by dropping it into the cold oil. It is a fun process, and in this same recipe, instead of using coffee, you can use any fruit juice.

Making this was so much fun and not difficult at all! And it’s not all for looks, it’s tasty too! I made this caviar to serve as an component with my mocha heaven desert. I really loved the balance the caviar brought to the entire dessert.

The caviar itself was not that sweet at all. When you have a spoon it added a burst of coffee flavor.

Black Coffee - I used a strong cup of black coffee (americano) for making this coffee caviar. You can use instant coffee powder and mix with water as well. Instead of coffee you can use fruit juice as well.

Sugar - a small touch of sugar is added to sweeten the coffee.

Agar Agar - agar agar is the important ingredient in making coffee caviar. Agar agar is mixed with fruit juice or black coffee and poured in dropper bottle. When we drop the liquid into cold oil it sets into sphere like shape.

Oil - I used neutral tasting oil like refined oil or sunflower oil. Some other oil freezes in cold temperature like coconut oil which is not recommended.

Caviar using Molecular Gastronomy

250g Fruit juice, 2g Sodium alginate,500g Water, 2.5g Calcium chloride

  1. Mix alginate with fruit juice.
  2. Dissolve calcium chloride in water.
  3. Drop droplets juice solution into calcium chloride water.
  4. Use strainer to remove droplets from calcium chloride bath after 1-2 minutes into a separate cold water bath.

For Better Success of Coffee Caviar

  1. Use a tall glass of oil to pour the caviar mixture.
  2. Use very cold oil to make this.
  3. Don't use oil that can harden in fridge like coconut oil.
  4. Use oil that doesn't have much flavor on its own.
  5. Instead of coffee you can use honey, fruit juice or vegetable juices.

How to Make Coffee Caviar (Stepwise Pictures)

Pre-Preparation

1)For making coffee caviar, you need agar agar powder. I am using this brand every time and it works great.

2)The day before making coffee caviar, take any neutral tasting oil in a jug and place it in freezer. The oil has to be very cold.

Make Coffee Caviar Mix

3)Take black coffee in a sauce pan. You can mix instant coffee powder with some water or brew some fresh black coffee. Make sure the coffee is cool.

4)Add in sugar into the black coffee and mix well.

5)Sprinkle some agar agar powder into the black coffee mixture. Let it sit for 10 minutes to bloom the agar agar.

Heat Coffee

6)Place the coffee mix on heat and cook on low medium heat till agar agar melts. Keep whisking the whole time.

7)The coffee mixture will thicken as it cooks.

Making Caviar

8)Take cold oil from the freezer. Pour the coffee agar agar mix into a dropper.

9)Now gently drop the coffee agar agar mix into the cold oil. As it sinks down the oil, it will set and form small caviar like shape.

10)Do this in patience. Make sure you drop one at a time.

12)Strain the coffee caviar in a sieve. Rinse the coffee caviar under cold water just once to remove the excess oil.

Expert Tips

  • Don't let the coffee mixture come to a rolling boil once agar agar is added, it may get stringy.
  • Use the syrup immediately. if you let it cool, then it may harden.
  • You can reheat it gently if the mixture harden.
  • Instead of sugar you can use any sweetner.
  • You can use dropper bottle, sauce bottles, syringe to dispense the caviar
  • This can be stored in fridge up to a week.

Equipment

  • 1 dropper bottle

  • 1 Sauce Pan

  • Tall Glass Cup

Ingredients

  • 1 cup Black coffee
  • 2 tsp Agar agar powder
  • 3 tbsp Sugar
  • 1 cup Refined oil

Instructions

  • Take oil in a cup and place it in the freezer for 1 to 2 hours. You can place the oil in fridge overnight.

  • Take black coffee in a sauce pan. Add in agar agar powder, sugar in it and whisk well. Heat this and keep mixing so it comes to a light simmer. Once the agar agar is mixed completely. Take it off the heat. Pour this into the dropper bottle.

  • Remove the oil from the freezer and use the dropper bottle to drop the coffee mix into the cold oil drop by drop. The caviar will form and it will harden and settle at the bottom of the cup.

  • Once it is done, strain the mixture. Rinse under cold water once. Your coffee caviar is done. Store at room temp for few hours. You can keep in fridge until serving.
