This slow cooker version of Turkey Barley Soup is comforting, hearty, healthy and totally delicious. It is a great way to use up leftover turkey or homemade turkey stock!

I have been mourning this soup all week. I can’t even tell you how much I love homemade turkey stock and anything made from it. If you’ve never made your own turkey stock, please go buy a turkey just so you can experience it. I’m serious. I ate this Turkey Barley Soup for breakfast, lunch and dinner and it was gone far too quickly.

Ingredients

  • 1 yellow onion chopped
  • 2 cups celery sliced
  • 2 cups carrots chopped
  • 1/4 cup flat-leaf parsley chopped
  • 2 cups turkey cooked, shredded
  • 1 cup barley rinsed
  • 12 cups homemade turkey stock substitution: 32 oz turkey or chicken broth

Instructions

  • In a large crockpot, combine onion, celery, carrots, parsley, turkey, barley and turkey stock. Mix well. Cover and cook on Low heat for 6-7 hours or High heat for 4 hours.

  • Serve hot. Top with extra parsley, if desired.

Cook 4 hours on high heat or 6-7 hours on low heat

    I only could find instant barley. How do I proceed with the recipe?

      Great question Nickki! The instant barley would be mush if you added it to the pot for the full cooking time. I would add it in the final hour and let it cook before serving. Otherwise, I would probably cook it separately and add it at the end.

        Thank you so much for the reply. My daughter & I will be making it tomorrow. Good to add an hr prior to get the flavors. Also, good to do it separate so we can add how much we want. I figured not to add it for the full cook time. Thank you for the recommendations.

    12 cups of water–REALLY???? All those ingredients won’t even fit into my crockpot. I used 8 cups of broth and it was more than enough. AND, a 32 oz. box of broth is only 4 cups.
